Delicious Yakhni Pulao Recipe
This flavorful rice dish features tender meat cooked in a fragrant broth. It's perfect for a potluck or a satisfying weeknight dinner.
Ingredients:
- Meat (beef or mutton)
- Onions
- Spices (fennel seeds, black pepper, coriander seeds, cumin, turmeric, salt)
- Yogurt or cream (optional)
- Ginger, garlic paste
- Bay leaves, cinnamon, cloves, cardamom
- Chili flakes, red chili powder (optional)
- Rice
Instructions:
- Make the Yakhni (Meat Stock): Boil water in a pan, discard it. Add meat, onions, and spices. Cook with fresh water until meat is tender. Remove meat and discard leftover spices, keep the flavorful broth.
- Sauté the Aromatics: Heat oil in a pan, fry onions until golden brown. Add bay leaves, cinnamon, cloves, cardamom, black pepper, cumin, ginger-garlic paste, salt, coriander powder, chili flakes, and red chili powder (optional). Sauté for a bit.
- Combine Meat and Rice: Add cooked meat and cook for a few minutes. Stir in yogurt or cream for extra flavor (optional).
- Cook the Rice: Use a generous amount of the flavorful broth. Bring it to a boil with some water (adjust water to get the desired consistency). Add soaked rice and cook on medium heat until the rice absorbs the liquid. Turn off the heat.
- Garnish and Fluff: Top with chopped ginger, green chili, and tomato (optional). Cover and let it sit for 15-20 minutes. Gently fluff the rice with a spoon to avoid lumps.
