Ingredients:
- Boneless, bite-sized chicken pieces
- Ginger-garlic paste (freshly made)
- Vinegar
- Salt
- Black pepper
- Egg
- Cornstarch
- Cooking oil

- Chopped onion
- Chili flakes (optional)

Instructions:
- Marinate chicken with ginger-garlic paste, vinegar, salt, black pepper, egg, and cornstarch.
- Fry chicken pieces in low to medium heat oil until golden brown.
- In a separate pan, heat oil and saute ginger-garlic paste until fragrant.
- Add carrots, capsicum, and onion. Cook until slightly softened.
- Add spices: salt, chili flakes (optional), black pepper, and sugar. Cook briefly.
- Add vinegar, soy sauce, chili sauce, and ketchup. Simmer for a few minutes.
- Thicken the sauce with cornstarch slurry (cornstarch mixed with water) if desired.
- Add fried chicken pieces and mix gently.
- Serve hot with egg fried rice (optional).
Tips:
- Don't overcrowd the pan when frying chicken to ensure even cooking.
- Adjust the amount of chili sauce for your desired spice level.
- You can substitute chicken mince for the chicken pieces.
- Sesame seeds can be added for garnish (optional).
